Dulcinea® PureHeart® Watermelon Mojitos

A refreshing twist to our favorite summer culinary cocktail.


Makes one cocktail

Mint Simple Syrup:

  • ¾ cup sugar
  • ¾ cup water
  • 2 tablespoons fresh mint, chiffnaded plus stems

Craft cocktail:

  • 1 lime
  • 1oz mint simple syrup
  • Mint leaves for garnish
  • 1 cup Dulcinea® PureHeart® Mini Seedless Watermelon, cubed (about ¼ of the melon)
  • 5-6 mint leaves, plus extra for garnish
  • Rum, white
  • Club Soda


Mint Simple Syrup:

  1. Combine water, mint and sugar in a medium size saucepan and heat over medium heat, stirring until all the sugar is dissolved.
  2. Bring to simmer for 2-3 minutes, stirring constantly.
  3. Remove from heat and let the mixture steep for 20 minutes.
  4. Cover and allow to cool. Can be made 24 hours in advance.

Creating your Craft Cocktail:

  1. Blend cubed watermelon in a blender or magic bullet to create about 1 cup of fresh watermelon juice.
  2. Combine 1oz of mint simple syrup with 2 oz of rum, fresh watermelon juice and 3 oz of club soda.
  3. Give it a good stir!
  4. Garnish with thinly sliced limes and a sprig of mint
  5. Optional garnish: Use a melon baller to create watermelon balls with the extra melon then freeze overnight to create watermelon ice cubes to keep your cocktail cool in the warm summer sun.

TIP: Slap the mint leaves against the palm of your hand to release more aroma and flavor before garnishing the cocktail.
